UB2000 is a universal bread improver in poweder form for all types of yeast raised dough. It is designed to give your dough a good processing properties, improves the baking properties and consistent product quality.

Recommended Dosage:

Sandwich Loaf 0.5% to 0.8% of total flour weight
Sweet Bun 0.8% to 1.0% of total flour weight
Toast Bread 0.6% to 0.8% of total flour weight

Storage: keep in cool and dry place, away from direct sunlight, free from odour. Seal tightly after use
Self Life: 12 months from production date
Pallet: 70 bags per pallet

Recipe for Sandwich Bread
Ingredients: Flour 1,000g, Sugar 120g, Salt 14g, Instant Dry Yeast 8g, Bread Improver UB2000 5g, Shortening 80g

Step 1 – Mix all the ingredients except for shortening for 2 to 3 minutes
Step 2 – Add in shortening and knead for 5 minutes
Step 3 – Rest the dough for 25 minutes or more, then divide into desire size

Mixing Time 15 to 17 minutes Proving Time 60 minutes
Dough Temp 26°c Baking Temp. 200°c
Resting Time 25 minutes

Recipe for Sweet Dough
Ingredients: Bread Flour 1,000g, Sugar 160g, Salt 10g, Martiana Margarine / Margarine 160g, Bread Improver UB2000 10g, Milk Powder 60g, Instant Dry Yeast 10g, Eggs 100g, Cold Water 550g

Step 1 – Mix all the ingredients except for Margarine for 2 to 3 minutes
Step 2 – Add in Margarine and knead for 5 minutes
Step 3 – Rest the dough for 25 minutes or more, then divide into desire size

Mixing Time 7 to 10 minutes Proving Time 60 minutes
Dough Temp 26°c Baking Temp. 200°c
Resting Time 25 minutes

Recipe for Toast Bread
Ingredients: Bread Flour 1,000g, Sugar 120g, Salt 20g, Bread Improver UB2000 8g, Milk Powder 30g, Instant Yeast 8g, Buttermas / Butter 75g, Cold Water 500g

Step 1 – Mix all the ingredients except for Butter for 2 to 3 minutes
Step 2 – Add in Butter and knead for 5 minutes
Step 3 – Rest the dough for 30 minutes or more, then divide into desire size

Mixing Time 7 to 10 minutes Proving Time 60 minutes
Dough Temp 26°c Baking Temp. 200°c
Resting Time 30 minutes
